Oyster Mushroom Pasta

Ingredients:

  • 500g pasta (your choice of shape)
  • 200g oyster mushrooms, cleaned and sliced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup vegetable or chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • salt and black pepper to taste
  • chopped fresh parsley (optional)

Instructions:

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced oyster mushrooms and minced garlic and sauté for about 5 minutes, or until the mushrooms are tender.
  3. Pour in the broth and heavy cream, and bring to a simmer. Cook for about 5 more minutes, or until the sauce has thickened slightly.
  4. Add the cooked and drained pasta to the skillet with the mushroom sauce. Toss everything together until the pasta is coated in the sauce.
  5. Add the grated Parmesan cheese to the skillet and stir until melted and combined.
  6. Season and serve
