Ingredients:
- 500g pasta (your choice of shape)
- 200g oyster mushrooms, cleaned and sliced
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup vegetable or chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- salt and black pepper to taste
- chopped fresh parsley (optional)
Instructions:
- Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced oyster mushrooms and minced garlic and sauté for about 5 minutes, or until the mushrooms are tender.
- Pour in the broth and heavy cream, and bring to a simmer. Cook for about 5 more minutes, or until the sauce has thickened slightly.
- Add the cooked and drained pasta to the skillet with the mushroom sauce. Toss everything together until the pasta is coated in the sauce.
- Add the grated Parmesan cheese to the skillet and stir until melted and combined.
- Season and serve
